Cheddar Chicken

This recipe is very simple to prepare and it was a hit with my family. I served it with a wild rice blend, green beans and collard greens. Yumm!  Enjoy!  -Claire

Ingredients
  • 16 cuttery crackers (as Ritz), crushed (about 3/4 cup) (I used Club crackers instead)
  • 6 oz. shredded sharp Cheddar cheese (I used 2%)
  • 1 clove garlic, pressed wtih garlic press
  • kosher salt and black pepper
  • 6 boneless, skinless chicken breats
  • 4 tablespoons unsalted butter, melted
Directions

  1. Heat oven to 350 degrees F.  In a bowl, combine the crackers, cheese, garlic, and 1/4 teaspoon each salt and pepper.
  2. Dip the chicken in the butter, then in the cracker mixture, pressing gently to help the crackers adhere.  Place the chicken in a Stoneware baking dish.
  3. Sprinkle any remaining cracker mixture on the chicken an drizzle with any remaining butter.  Bake until the chicken is golden brown, 25-30 minutes (or longer depending on the thickness of the chicken breasts)
Let chicken rest for 15 minutes after cooking.
