Baked brie en croute

Easy, attractive and delicious! Perfect for a holiday appetizer. -Claire

Ingredients:
1 8 oz. wheel Brie cheese
3 tablespoons apricot or peach preserves
1/2 (17.5 oz.) package puff pastry, thawed
1 egg white

Directions:
Preheat oven to 350 degrees F. Lightly grease cookie sheet (or preferably small round stoneware mini-baker)
Slice wheel of Brie in half so you hae 2 circles of cheese. Spread preserves on (the cut side) half of one circle of brie. Make sandwich out of the two halves of Brie, so that the preserves are in the center of both halves.
Wrap the entire wheel of Brie with one sheet of puffed pastry and flip the entire conconction onto the prepared cooking sheet so the seam is on teh bottom.
Brush the puffed pastry withthe egg white.
Bake for 30 minutes, or until the pastry is golden brown.
Serve immediately with crackers and/or granny smith apple wedges.

Tips:
Optional: Trim some of the points off of the edges of the pastry before wrapping it and cut decorative designs with small pastry cutters to put on top of the wrapped wheel before brushing with egg white and baking.

If you choose to serve with apple wedges, dip them in lemon-lime soda after slicing to keep them from browning
