Chicken Divan

My late mother-in-law, Mary Alice Woodlief used to make this recipe and it was one of her specialties! It showed up at the family reunion today and I didn't even make it! Good stuff just gets shared and repeated! -Claire

2-10 oz. pkg frozen broccoli florets
3 cups chopped cooked chicken (approx. 5 breasts) or turkey
2 cans condensed chicken soup
1 cup mayo
1 tsp lemon juice
½ tsp. curry powder
½ cup shredded cheddar cheese
½ cup soft bread crumbs
1 tablespoon butter or margarine, melted

Preheat oven to 350 degrees. Cook broccoli as directed, drain. Arrange broccoli into slightly greased 9” x 13” baking dish. Place chicken on top. Combine soup, mayo, lemon juice and curry powder. Pour soup mixture over chicken. Sprinkle with cheese. Combine bread crumbs and butter, sprinkle on top. Bake 25-30 minutes.

Optional: trim with pimento strips

Serve with rice.
