Gooey Pumpkin Cake


Our mother, Carol Cox, made this cake several years ago for Thanksgiving. She says she didn't, but she did. She even typed the recipe and gave it to us. Guess forgetfulness comes with age??? Shhhh.....don't tell her we said that.

1 box yellow cake mix
1 stick margarine, melted
1 egg

Mix well and press firmly in a 9 X 13 greased dish.


1 (8 oz) pkg. cream cheese
1 box confectioner's sugar
1 stick margarine, melted
3 eggs
1 t. vanilla
1 (15 oz) can pumpkin (not pumpkin pie filling)
1 t. cinnamon
1/2 t. nutmeg

Mix and pour over first layer. Bake at 350 degrees for 45 minutes. Check cake and if not firm, cook additional 5 to 10 minutes longer. Top with dollop of cool whip when serving.
