Key Lime Cake

This cake recipe is in "Pocket Pleasures", the cookbook that my church created a couple of years ago. Mrs. Catherine Simpson contributed it. It is yummy! -Karen

1 box lemon cake mix
4 eggs
1 1/3 cups oil
3/4 cup orange juice
1 (3 oz) box lime jello (dry)
3 limes
6 T. powdered sugar

Preheat oven to 350 degrees

Mix cake mix, eggs, oil, orange juice and jello in mixer for 3 minutes. Bake in 3 (9 inch) layers for approx. 30 minutes or until done.

Mix juice of 3 limes and the 6 T. powdered sugar. After layers cook and are still warm, punch holes in all layers with handle of wooden spoon. Spoon lime juice and sugar over cake.

Icing:
1 (8 oz.) cream cheese, softened
1 box powdered sugar
1 stick margarine (softened)
1 t. vanilla
1 c. chopped pecans

Cream cheese and margarine until well blended. Add sugar, vanilla & nuts and spread on cake layers. Sprinkle additional chopped pecans on top for garnish.
