Mission Baked Beans

I found this many years ago in a country cooking cook-book. It has become a family favorite!! -Karen

8 bacon strips, cooked and crumbled
1 can (28 oz) pork and beans
1 can (15 ½ oz) chili beans, undrained
¾ c. finely chopped onion
½ c. packed dark brown sugar
1 can (8 oz) enchilada sauce
1 T. all purpose flour
2 t. chili powder
1 t. ground cumin
1/8 t. garlic powder
1 cup shredded Monterey Jack Cheese

Combine all ingredients except cheese; mix gently. Place in a greased 2 qt. casserole. Bake, uncovered, at 475 degrees for 15 minutes. Reduce heat to 375 degrees, bake for 30 minutes, stirring occasionally. Sprinkle with cheese; bake 15 minutes longer.
