Penne A La Vodka

My friend, Rosa Emory, turned me on to this recipe while we were vacationing together this summer. Delicious and makes great leftovers! -Claire

2 lbs. penne pasta
½ cup butter
1 onion, diced
2 cloves garlic
1 cup vodka
2-28 oz. can crushed tomatoes
2 tsp sugar
¼ t. ground red pepper
Italian seasoning
1 pint heavy cream

Sauté onion and garlic in butter until slightly brown and soft. Add vodka, simmer 10 minutes.

Mixed in crushed tomatoes, sugar, pepper, Italian seasoning. Simmer 30 minutes.

Pour in heavy cream, simmer 30 minutes.

Add to pan with cooked penne, let sit for awhile for flavors to blend.

Optional: add chicken cutlets in place of 1# of pasta
