Potato Cheese Soup
Made this soup for tonight's dinner...perfect for this cold, windy, wintry night!! Very easy and tasty soup- family favorite! Served it with a salad and crusty french bread! (Even better if it's made a day ahead of time and reheated!!) - Lisa
Serves 6 – 8
4 T. butter
1 onion, chopped
6 – 7 medium potatoes, peeled & cubed
1 large clove garlic, minced
Salt & pepper
1 can cream of chicken soup
6-8 ounces shredded cheddar cheese
1 soup can milk
Saute onion in butter. Add potatoes and just cover with hot water. Add seasoning. Cook until tender. Stir in cheese, melt. Add soup and milk.
