Potato Gratin


If you love Gorgonzola cheese, you will LOVE this dish!!! Wonderful as a side with steak...

8 oz bacon, cut into thin strips
8 oz pearl onions
1 1/2 pounds potatoes, cooked (medium wedges/chunks- not diced)
4 oz crumbled Gorgonzola cheese
Salt and Pepper to taste

Preheat the oven to 350 degrees. Cook the bacon in a hot skillet until crisp and brown. Remove the bacon with a slotted spoon and add the pearl onions to the pan drippings. Reduce the heat and cook until the onions are caramelized.

Combine the bacon, pearl onions, potatoes and Gorgonzola cheese in a bowl and mix gently. Season lightly with salt and pepper, taking care not to oversalt, as the bacon and cheese are salty. Spoon into a buttered baking dish and bake until the cheese melts and the potatoes are heated through.
