Pound Cake


This is the most requested dessert recipe in my family. It's Mama's recipe, and never fails! It is possibly even better a day or two after you cook it, but it seldom lasts that long in my house full of teenagers! It's great by itself, or as a base for strawberry shortcake (freshly sliced strawberries with a little sugar, topped with whipped cream), or served with chocolate sauce, but it's great just as is! 3 cups sugar
3 cups plain flour
1 teaspoon lemon flavoring (or vanilla or black walnut or rum)
1/2 teaspoon baking powder
1 tablespoon rum flavoring (or vanilla)
2 sticks butter, softened
5 large eggs
1/2 cup Crisco
3/4 buttermilk

Cream Crisco, butter and sugar. Add eggs, one at a time, beating well. Add flour, baking powder and milk, alternately. Add flavorings. Put in well greased tube pan in a COLD oven. Set temp to 350 degrees F. Cook 1 hour 15 minutes. After removing from oven, cool in pan 15 minutes, then dump out onto rack and back upright on your cake plate.

*You can really personalize the flavor of this cake by the flavorings you choose, all combos are great! Kali's has even added a teaspoon of Pampered Chef's Cinnamon Plus Spice Blend for a yummy interesting twist. 

No buttermilk on hand? Here's a substitution: 1 cup milk plus 1 tablespoon lemon juice or vinegar=1 cup buttermilk.
