Roasted Vegetables

Kali and I created this and it is great! Delicious and nutritious! -Claire

1 bunch of fresh asparagus, trimmed
1 lg package of baby portabella mushrooms, quartered
1 container grape tomatoes
olive oil
lemon pepper
fresh Parmesan cheese

Spread asparagus, mushrooms and grape tomatoes on large baking pan. Drizzle with olive oil, sprinkle with lemon pepper seasoning. Cook at 350 degrees for about 15 minutes or until vegetables are tender but not mushy. Remove from oven and sprinkle with freshly grated Parmesan cheese. Voila!
