Shrimp & Crab Casserole

This recipe is a favorite of Ned Jarrett, former Nascar Superstar!! You must try it. You'll end up in Victory Lane for sure. -Karen

1/8 c. all purpose flour
1/4 t. black pepper
2 cups milk, divided
1/3 cup pasteurized processed cheese sauce, like cheese whiz, or velveeta
1/2 t. Tabasco hot sauce
1/2 pound medium shrimp, cooked, peeled, and deveined (about 1 1/4 cups)
1/4 pound crabmeat (about 3/4 cup) - use the imitation stuff - I do!!
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. In a small bowl, combine flour, pepper, and 1/4 cup of milk; beat with a whisk or fork until smooth and set aside. Pour remaining milk into top of double boiler and place over simmering water on medium-high heat; add cheese sauce and heat until melted. Stir in Tabasco sauce and flour mixture; cook and stir until smooth and thickened, about 5 minutes. Remove from heat and gently stir in shrimp and crabmeat. Pour into a shallow 2 -quart baking dish and sprinkle cheese on top. Bake 15 to 20 minutes or until cheese is melted. Serve over rice, if desired. Serves 6 to 8.
