Twice Baked Potato Casserole

Like twice baked potatoes? This casserole tastes just as good, but can be ready in less time. My friend and co-worker, Tiwana Cole shared this recipe with me. -Karen

2 lbs. red potatoes
8 oz. cheddar cheese, shredded
8 oz. sour cream
Scallions (optional)
8 pieces bacon, cooked, cooled and crumbled
1 stick butter, cut into small pieces
salt & pepper to taste

Boil unpeeled potatoes; drain. Mash together with all other ingredients. Bake in greased 9 X 13 casserole dish for 30 mins. in 350 degree oven.
