BBQ Pork

My friend Kaylor Suitt served this several years ago and shared her recipe with me.  This has become a family favorite and it's an incredibly easy way to enjoy BBQ without having to head to the local restaurant!  You can personalize the flavor by serving it with different sauces. Reheats well!  Enjoy.  -Claire

  • Pork loin or tenderloin (you can substitute a Boston Butt or other pork roast but you'll have to work through a lot more gristle and  fat!)
  • Seasoned Salt
  • Black Pepper
  • 1 pint chicken broth
  • BBQ Sauce of choice (I like to use George's Hot and Sweet Baby Rays)

Preheat oven to 325 degrees.  Place pork in a baking dish and sprinkle liberally with Seasoned salt and black pepper.  Pour a pint of Chicken Broth around the pork to help keep it moist while baking.  Cover with foil and bake for 2 hours.  Chop while warm and toss with a minimal amount of sauce.  (I like to use about twice as much George's Hot as the Sweet Baby Rays).  Just add enough sauce to lightly coat the pork and serve with slaw and buns for sandwiches and/or with other sides of your choice.  Serve with additional sauce(s) so everyone can personalize it to their own preferred taste.
