Company's Coming Mac 'n Cheese


Near the end of winter break from Appalachian one of Kali's friends came to visit for a couple of days and the Mac 'n Cheese recipe Kali requested for dinner was going to take more time than I had available to prepare dinner.  So.... I adapted to come up with this fabulous alternative!  It was enjoyed by all and made good leftovers for the next couple of days!  Give it a try when company's coming and you want to serve something delicious but are limited in time! -Claire

Ingredients:
1 lb. box elbow macaroni
6.5 oz. container of Boursin Garlic and Herb cheese
3 Tablespoons butter
3 large eggs
1 cup cream, half and half or milk (I used 3/4 cup heavy cream and 1/4 cup 1% milk...what I had on hand!)
1/2 cup  low fat sour cream
1/2 teaspoons salt
pinch red pepper flakes

Topping:
1 sleeve Whole Grain Ritz crackers, crushed
4 Tablespoons butter, melted

1. Preheat oven to 350 degrees.
2. Cook macaroni as package directs.
3. Spray a 9" x 13" baking dish with cooking spray.
4.  Combine all ingredients (except the topping) and pour into baking dish.
5.  Crush crackers and toss with melted butter for topping, sprinkle over the macaroni mixture.
6.  Bake for 30 minutes.
