Old School Funky Chicken Pizza


Mellow Mushroom had a Funky Chicken Pizza on their menu for many years that was pretty similar to this and it was my favorite! Depending on who is working, if you ask for Old School Funky Chicken Pizza at the Mellow Mushroom  on Peace Street in Raleigh (the original location), you might be in luck to find a pizza chef who still knows how to make it!  Don't make the mistake of ordering Funky Chicken Pizza off their current menu because it is not the same and it's not nearly as good as the old school version!  My copy cat is pretty close and quite delicious!  -Claire

Ingredients:
1 pizza crust (use a crust mix, buy a roll of pre-made dough or use pre-made (I used Mama Mary's thin crust this time)
olive oil
Pesto (I use Classico)
Part-skim Mozzarella Cheese (about 1 1/4- 1 1/2 cups)
Grilled Jerk Chicken (I cooked a couple of thin slices of chicken breast in a grill pan after seasoning with a Caribbean Jerk Seasoning), Chop after cooking
Italian Sausage, cooked, drained and crumbled
Red onion, thin slices
Roma tomato (The restaurant does not add tomatoes but I like the addition for color and taste!)

Preheat oven to 425 degrees F.

Place pizza crust on Stoneware Baking Stone and brush lightly with olive oil.

Spread pesto almost to the edges, leaving an edge to the crust.


Sprinkle with cheese, top with Jerk Chicken, Italian Sausage, red onion and tomato.


Bake 10-12 minutes until crispy and crust is brown.  Voila!
